Ingredients: 2 cups cooked rice (day-old or cold rice works best) 8 oz pork (cut into small bite-sized pieces) 2 tbsp vegetable oil (for frying) 2 eggs (beaten) 1 small onion (diced) 2-3 cloves garlic (minced) 1 cup frozen peas and carrots (or other mixed vegetables) 3 tbsp soy sauce (or to taste) 1 tbsp oyster sauce (optional, for extra umami flavor) 1 tsp sesame oil (for a finishing touch) 2 green onions (chopped, for garnish) Salt and pepper to taste Instructions: Prepare the pork : Season the pork with a little salt and pepper.   • 1 large flour tortilla

  • 1 tablespoon butter or oil for cooking
  • 1/4 avocado, sliced (optional)

Instructions:

  1. Prepare the fillings:
    If using sausage, bacon, or ham, cook them in a skillet over medium heat until fully cooked. Remove from the skillet and set aside.

  2. Sauté the veggies:
    In the same skillet, add a little oil or butter and sauté the diced veggies (like bell peppers, onions, or spinach) until softened. Remove from the skillet and set aside.

  3. Scramble the eggs:
    In a bowl, whisk the eggs with a pinch of salt and pepper. Add butter or oil to the skillet and pour in the eggs. Cook, stirring occasionally, until soft scrambled.

  4. Assemble the burrito:
    Warm the tortilla in a pan or microwave for a few seconds to make it pliable. Place the scrambled eggs in the center of the tortilla, then layer with your cooked meat, sautéed veggies, black beans, shredded cheese, and avocado slices (if using). Add salsa or hot sauce if you like.

    Fold in the sides of the tortilla, then roll it up tightly from one end to the other, burrito-style.

  2. Optional: Toast the burrito:
    To get a crispy exterior, place the wrapped burrito seam-side down in the skillet and toast over medium heat for 1-2 minutes on each side until golden brown.

    Slice the burrito in half and serve with extra salsa, sour cream, or guacamole.
