Ingredients: 2 cups cooked rice (day-old or cold rice works best) 8 oz pork (cut into small bite-sized pieces) 2 tbsp vegetable oil (for frying) 2 eggs (beaten) 1 small onion (diced) 2-3 cloves garlic (minced) 1 cup frozen peas and carrots (or other mixed vegetables) 3 tbsp soy sauce (or to taste) 1 tbsp oyster sauce (optional, for extra umami flavor) 1 tsp sesame oil (for a finishing touch) 2 green onions (chopped, for garnish) Salt and pepper to taste Instructions: Prepare the pork : Season the pork with a little salt and pepper.   • 4 corn tortillas
  • 4 large eggs
  • 1 cup refried beans (optional)
  • 1 cup salsa (homemade or store-bought)
  • 1 ripe avocado, sliced
  • 1/4 cup crumbled cotija or feta cheese
  • 2 tablespoons fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 1/2 teaspoon olive oil
  • Salt and pepper to taste

For the Salsa (if making homemade):

  • 4 ripe tomatoes, diced
  • 1/2 small onion, finely chopped
  • 1 jalapeño, finely chopped (optional for heat)
  • 1 garlic clove, minced
  • 1 tablespoon fresh lime juice
  • 2 tablespoons cilantro, chopped
  • Salt and pepper to taste

Instructions:

1. Make the Salsa (if homemade):

  • In a bowl, combine diced tomatoes, onion, jalapeño, garlic, lime juice, and cilantro. Season with salt and pepper. Set aside.

2. Warm the Tortillas:

  • Heat a skillet over medium heat and lightly toast the corn tortillas on each side for 1–2 minutes until slightly crispy but still pliable. You can also warm them in the oven.

3. Cook the Eggs:

  • In the same skillet, add a small amount of olive oil and fry the eggs until the whites are set but the yolks are still runny (about 3-4 minutes). Season with salt and pepper.

4. Assemble the Huevos Rancheros:

  • Place a warm tortilla on each plate.
  • Optionally, spread a layer of warmed refried beans on each tortilla.
  • Spoon some salsa (homemade or store-bought) over the beans.
  • Top each tortilla with a fried egg.
  • Garnish with sliced avocado, crumbled cotija or feta cheese, and fresh cilantro.

5. Serve:

  • Serve immediately with lime wedges on the side for an extra citrusy touch.

Tips:

  • You can also add extra toppings like pickled jalapeños, sour cream, or hot sauce.
  • For a heartier meal, serve with rice, beans, or grilled vegetables on the side.
