Instructions:

  2. Add Garlic and Ginger:

    • Stir in the minced garlic and grated ginger, cooking for an additional minute.
  3. Add Spices and Vegetables:

    • Add the curry powder, turmeric, and mixed vegetables. Stir well to coat the vegetables in the spices.
  4. Add Coconut Milk:

    • Pour in the coconut milk and season with salt. Bring to a simmer, then reduce heat and let it cook for about 15-20 minutes until the vegetables are tender.
